Organic Millet - In The Field

Millet is a low water, semi-drought resistant gluten free grain grown in many semi-arid regions such as Africa, Asia, Eastern Europe, and of course here in the USA. I had the opportunity to walk the Millet fields in Northern Colorado recently. Plantings were very strong this year so acreage is up. The crop is off to a very nice start with an even balance of heat units and periodic rainfall. This is good news as last years crop was very poor. We have quite a ways to go before we better understand the outcome of the crop with harvest in the September time frame. Millet can be used in recipes similar to quinoa and amaranth as a gluten free nutritional staple.
